Basically, I made Mediterranean Chicken in Foil Packets, based on this recipe from Gluten Free Goddess. I used frozen spinach because I couldn't find fresh, red pepper strips, diced tomato, chopped garlic, leftover fresh flat leaf parsley and dill from the potato salad recipe below and sliced onion. I did everything as described in the fish recipe, and baked.
As a side dish, I made Herbed Potato Salad, using this recipe.
When I went to buy the Dijon mustard, I found out that Dijon here and Dijon at home are two different things. Apparently, Dijon here is hot. I don't like hot, so I used something called delicatessen mustard instead. Either way, it was good. Really, really good. Next time I will use less oil and more chicken broth. That is just my personal preference, though.
